Coyo Taco co-founder Scott Linquist reflects on 10 years of bringing delicious Mexican food to Miami.

Coyo Taco is part of Miami’s pulse, thanks to co-founder and executive chef Scott Linquist. What started as one spot in Wynwood 10 years ago has since expanded to 13 incredible locations worldwide. Staying grateful to the Miami community and humble with success, we chat with Linquist about his worldwide locations and plans for the future.
What does this upcoming anniversary mean to you?
We have been truly blessed! The anniversary is a time to look back and thank all who have come on this incredible ride with us—our fantastic team and very loyal Miami family (our guests). We are grateful for what we have built and look forward to the next 10 years!
What have you learned throughout the past 10 years?
We have learned so much. Outside of food and cooking, there are real estate locations, leases, personal guarantees, business law and some earnest humility because we are only as good and big as our team. In our case, luckily, that’s big! Thanks to them, they are the real heroes!
Is there one dish that stands out among the other?
My favorite taco is cochinita pibil, our achiote-marinated slow-roasted Yucatan-style pork. I learned how to make this dish in the jungle on the Yucatan Peninsula. I am very proud of our “todo es fresco” mantra. It is as true today as it was 10 years ago—we still make all our salsas fresh and hand-press every corn tortilla the same way we have always done.
What is one memory that sticks out over the past 10 years?
We’ve had some incredible Cinco de Mayo celebrations, and our secret back bar in Wynwood has hosted some of the world’s greatest DJs and performers. Still, the most iconic memory has to go to former President Obama coming to visit COYO Taco Wynwood.
If you could go back and give yourself advice, what would it be?
