The cuisine centers around three key pre-Hispanic elements: Nixtamal, wood fire and Mezcal. Highlights from the menu include succulent meat and seafood dishes, such as the carnitas prensadas made with pork, black beans, guacamole and chicharron; or the whole local snapper imbued with a pleasantly smoky tang. Guests are also encouraged to choose from more than 400 mezcals and tequilas featured on KoKo’s spectacular display wall or try one of KoKo’s colorful, handcraft ed cocktails like the refreshing mango petacon, made with tequila or Mezcal, mango puree, mint triple sec and lime juice, for a sweet sip.
