Michelin-Starred chef Shingo Akikuni opens new namesake restaurant.

Tucked inside the historic La Palma building in Coral Gables, chef Shingo Akikinu brings his culinary artistry to his new namesake restaurant SHINGO—an intimate, 18-course omakase experience featuring traditional Japanese nigiri, seasonal sashimi and Yakimono dishes with premium sake pairings.

Chef Shingo is a third-generation sushi chef hailing from Osaka, Japan, and is recognized by several fine dining accolades and an impressive resume spanning Tokyo, New York and Miami. Before he dreamt up his eatery, he served as executive chef at Hiden, which was awarded a Michelin Star in 2022—one of the first Miami restaurants to earn this prestigious recognition.
Inside SHINGO, the 850-square-foot space has been entirely designed and constructed by expert woodworkers in Kyoto, Japan. Every step of the dining experience has been meticulously detailed, fusing special touches of Japanese design elements and vintage materials. Hinoki and Sugi woods flank the ceiling to the grand entrance, which doubles as an art gallery. For the dining counter, a rare, 10-meter slab of Hinoki wood was sourced to perfectly seat 14 guests where you watch the masterful hands of chef Shingo at work, from preparing the sushi rice in a wooden hangiri, grating fresh wasabi root and deftly molding each nigiri creation to perfection. This culinary sanctuary immediately transports you to a classic omakase den you’d find across the Pacific.

Throughout each course, you’ll find chef Shingo’s personal touch beyond the cuisine, from unique silver chopstick holders to an array of custom-made ceramics by famed artist Shin Murata, handcrafted in the mountains of Kumogahata. If you opt for the sake pairing, each wine is served in stunning Edo Kiriko vessels characterized by its decorative cut glass.
The menu at SHINGO changes seasonally, with a rotating selection of fresh sushi variations and Yakimono dishes prepared through traditional grilling techniques.
